Sweet Potato Soup

Preparation Time: 10 mins
Cooking Time: 20 mins



Ingredients:


2 tsp oil
2 cloves garlic, crushed
1 medium onion, chopped
1 tsp mild curry powder
2 cup water
1 1/2 cup soy drink
1 lb sweet potato, peeled and chopped
1 vegetable stock cube, crumbled


Directions:


Heat oil in a large saucepan. Sauté garlic, onion and curry powder until soft.

Add potato, water and stock cube. Simmer covered for 15 minutes or until vegetables are cooked. Cool.

Blend or process sweet potato mixture until smooth.

Gradually add soy, processing until well combined.

Return to saucepan and heat through but DO NOT BOIL.

Serve with crusty bread rolls.

quick question: I have "rice dream" and skim milk in the refrigerator. can i use one of these?

if not...and i'm going to go purchase something...would you suggest the evaporated skim milk?

Cooking is all about experimentation. Try one or the other and see if you like how it comes out.
