I have played around with different recipes but he is one a made a week ago and its pretty good when fresh, though a bit dry. You can add more oil/oil replacement, baking powder and seltzer to lighten them up.

1 cup Atkins Bake Mix
1 cup of Oat Bran
1 cup of Isopure Whey
1 cup seltzer
2 egg whites
2 tsp baking powder
1 Tbsp Wheat Gluten
1 Tbsp of sweet & low brown
1/2 tsp salt
1/2 cup almonds chopped
1 Tbsp of Oil Replacement (fruit puree or applesauce)

This makes six decent size muffins with the following breakdown, per muffin:
29g protein, 7.6g fat, 17 carbs, 6.5g Fiber, 2g sugar.

The fat can be increased by using whole eggs and oil, or decreased by removing the almonds. Carbs can be decreased by using 2 cups of Atkins and no oat bran. I have also used ground fiber one cereal in the past. My second batch I got greedy and used 1.5 cups of protein powder -- wasn't as good!

Hey TP -- where can I get the Atkins Bake Mix?
 
I think he sells it online. Also the GNCs by me carry it. Dr. Atkin's has been promoting low carb diets for 30+ years. A few years ago he started his own line of products. The bake mix is good -- really low carb and low fat. You can use it to make pancakes, cookies, etc.
