Saute up some veggies, diced tomatoes, and herbs you like. Pour over top of chicken and rice. There's tons of options with veggies alone to keep it interesting for you.

Personally I love broccoli, mushrooms, and garlic stir fry. I also saute up fresh diced tomatoes, garlic, and red pepper flake.

I use virgin olive oil for any med to high heat saute. EVOO will burn to quickly at higher temps.

Try a fresh sprig of rosemary right into the chicken...adds flavor.
Also cyanne pepper is a great spice and adds flavor along with fat free salad dressing (try Italian herb) glaze chicken with it then broil.

Ms.Dash seasoning.

Obstacles don't have to stop you. If you run into a wall, don't turn around and give up. Figure out how to climb it, go through it, or work around it.

Hot salsa. Cut up some habaneros/jalapenos and make it spicy as hell.

My favorite spice is cumin.

Here's a simple rub for chicken (or pork)

1 tbs ground cumin
1 tbs ground corriander
1/2 tbs salt (more or less to taste)
1 tsp pepper

Mix and rub on to chicken before cooking.

MMmmmmm.. thinking about cumin makes my mouth water.

I do that too, or smear on some hummus afterwards.

Small amounts of organic pickle relish, Salsa, or mustard work just fine!
