lets say i go over my daily calorie requirement, should i under eat the following day?

If you like, sure. Depends on your goals, but yeah, it's all about the average over time.
I sometimes under-eat for a few days before a planned event, for instance when I know I've got a dinner party to go to.

I wouldn't massively undereat, especially if a workout day - but yeah, as Built said you do have to control the average.
You go under, you can go over. You go over, you gotta go under. B. |

Eat the same as you normally would. I find that eating fewer calories sets you up for another fall the day after next. I went through a really bad cycle of doing that last year. Sometimes you're too close to see how much of a dufus that you are being!
Proteins are good... Fats are good... Carbs are the problem!
