Fatty Acid Profile
California walnuts have a healthy fatty acid profile, made up of mostly polyunsaturated and monounsaturated (14%) lipids. There are two classes of polyunsaturated fatty acids -- omega-6 and omega-3. Walnuts are a good source of alpha linolenic acid (ALA), the parent compound of the omega-3 family. Most vegetable oils used in our diets are rich sources of the omega-6 fatty acids. Scientists believe that the optimal ratio of omega-6 to omega-3 fatty acids is around 4:1. Current ratios in the US diet range from 14:1 to 20:1. Including walnuts can help decrease the omega-6 to omega-3 ratio in our diet, which nutritionists believe would be beneficial to health. One ounce of walnuts (28.35g) provides 2.57g of ALA. although the United States has not specified the exact amount required, the recommended dietary intake of the omega-3 family has been established by other countries (eg., Canada, Denmark, Japan and the United Kingdom), of approximately 1 to 2 grams per day.
