Ah, The Captain knows the Captain's Tea.....or is quick to do a web search. Tea Ceremony? Is the Captain light on his Sea Legs?
Stolen from Wiki land....
"Tannins are astringent, bitter plant polyphenols that either bind and precipitate or shrink proteins and various other organic compounds including amino acids and alkaloids. The astringency from the tannins is what causes the dry and puckery feeling in the mouth following the consumption of unripened fruit or red wine.[1] Likewise, the destruction or modification of tannins with time plays an important role in the ripening of fruit and the aging of wine." Since I was once upon a time a professional woodworker (oh, the comments thatmight follow) I usuallt think of tannins in relation to wood......e.g., when oak is exposed to direct moisture, it will turn black..due to the reaction of the tannins within.
As far as tea is concerned.....One bag of tea, 8oz.
good water...heat until it is between 165 and 170 degrees,
never boil green tea or it will become bitter....steep until desired strength is achieved, and drink up.
You're welcome, Anti-American bastard man.
