    Need a healthy "Chocolaty" coating for a home grown protein bar.

    I'm trying to develop a top quality protein bar here at home.
    So far great results in the bar itself but I am now looking for a healthy Chocolate type coating to apply for a "candy bar" texture.

    Need a no or very low sugar option. Good taste is obviously a key objective.

    3/4 cup butter
    3/4 cup Sun Crystals Granulated Blend
    1/2 cup evaporated whole milk
    5 ounces (10 Tablespoons) cocoa
    4 ounces milk chocolate (chips or solid)
    1/8 teaspoon salt
    1 teaspoon vanilla

    Combine all ingredients except vanilla in a microwave proof bowl, and microwave on 50% power until melted (a few minutes). Microwave on 50% power for 10 minutes, stirring occasionally, until bubbly and very thick. Remove from microwave and stir in vanilla. Store in glass container in refrigerator.

    ps. I changed the 1 cup of sugar in the recipe to 3/4 cup Sun Crystals. My wife makes this for different desserts and we love the taste of Sun Crystals!

    Thus far my search for a product and method to coat my bar has turned up very few options.
    I have however decided to try out one method that seems to make sense.
    Using the technique of Tempering Chocolate.

    Tempered chocolate is the secret to professional chocolate products. Chocolate that has been tempered is smooth, with a shiny finish and a satisfying snap. If you're planning on making dipped chocolates or molded chocolates, the chocolate will need to be tempered so that it behaves properly and produces candies that are both tasty and beautiful.


    Using Couverture Chocolate which has a higher cocoa and cocoa butter content than milk type chocolate I hope to coat my bars with a low sugar dark coating.

    It all sounds good on paper ! We'll see in a couple of weeks when I plan to try out a batch.

    If anyone has used this method I am still undecided how to judge the amount of chocolate I'll need for coating purposes and would welcome suggestions. This stuff aint cheap!

    Stacy,
    I can only speak for myself but my motivation is to see if there is a better and more cost effective source for protein, carbs and essential fatty acids.
    By better I mean healthier and more natural.

    I am also looking for a formula that I could potentially market as a better quality and cheaper protein/meal bar.
    As an example I already have a great tasting recipe that gives me 933 calories per bar, 44g whey protein and 71g of carbs with very little sugar.

    I have yet to buy the ingredients at bulk pricing but my material cost per bar making small personal and test batches is running around $1.35 each (unpackaged).

    The retail bars I have found on the market are about half the protein grams and half the calorie content at a much greater price.

    * Obviously there are many who want a different make-up bar such as low calories, next to no fat etc.

    I am after a specific product. I train younger teen athlete's and see many of them fall into the trap of the ultra low fat, low carb, low everything type diet and supplements. 90% of them do not understand the necessity of quality fats and the high caloric intake requirements in their diet to develop muscle mass at their age.
    I strongly believe that while a lean diet is appropriate for adults training and regulating their needs the teen athlete has very different caloric and nutritional needs to properly develop and to bulk up with healthy natural foods and not supplement based programs.
    Let me stress again I am not saying that supplements do not have a proper place in the training programs of adults.
