Turkey, Buffalo, fish. You could try different spices and such to flavor things up some.
So chicken breast has been a daily staple in my diet for years. The problem is that it is getting real hard to eat. Maybe my tastes are changing but it is really starting to suck. How do you deal with getting sick of such a nutritional staple? What could I use to substitute for a while? Any thoughts or recomendations appreciated.

Didn't mean to imply I eat only chicken, I eat tons of other stuff. Whole eggs daily, lean beef, tuna, greek yogurt just to name a few. I just started having a tough time eating chicken, and that's such a great protein source. I try to keep to only two protein shakes daily- pre (with lunch) and post workout (I hit the gym in the afternoon), although I'm considering adding a form of casein at bedtime- that's why I liked the cottage cheese suggestion, I think food is much better than a shake. As far as the chicken I'm gonna have to figure out how to make up the protein loss somehow.
its called charcoal....

There are many different ways to cook it. I'd recommend trying some new recipes. There are many that are on this forum too in the recipes section.
DRSE Reconnaissance
Grill with a touch of bbq. Fill that grill up and eat them all week long. Or pan sear it in cast iron with some spices.
I'm sure you've thought of this though.
How about making some casserols with rice and cheese?

have you thought to move toward another meat that is really close? Turkey? Duck? emu? ostrich? cornish game hens? I wouldn't do them, but for some they've called it food for a long while.
I am having to agree with many of the other suggestions that your spices and method of cooking it with other items, might change your taste around.
good luck!
Training is everything. The peach was once a bitter almond; cauliflower is nothing but Cabbage with a College Education.
I feel your pain on this one. It has gotten to be the same for me. I found some marinades that seemed to help when I grill with them. I looked for some that didin't have too much sugar in them and tried several out. Some were better than others, just like bbq sauce. I try to not use bbq sauce as the ones I liked were loaded with sugar. Lately, I have added some venison into the mix as a partial protien replacement. Luckily for me I get it free from some buddys who hunt a lot so that is a plus as well. Sprinkle it with some kavenders greek seasoning and its g2g.
I got a cooler full of deer on ice right now. Make some jerky for work/school and there's a nice snack! Pretty much my incentive for hunting.

I used to eat stove grilled chicken breast twice a day but now I just eat it once a day. I substituted the 2nd chicken breast meal with top sirloin steak!
You could also try putting ketchup on the chicken :P
The occasional stir fry with veggies is a stapel too
