I inject my chicken with a soy sauce/lemon juice concoction. Any 21 gauge syringe will do.

Then coat with oil, pepper, garlic powder etc

those both sound like real good ideas especially since syringes are so cheap. mollasses sounds really nice, how would you do that? would you use it only on chicken breasts or sweet potatoes too?

Love lime! cinnamons got a lot of extra health benefits too, one of the main ones is regulating blood sugar, perfect on complex carb foods like sweet potatoes

Lemon pepper is a good choice for chicken, unfortunately is does contain sodium.

Thumbs up if you like lime!

try this on chicken breasts. I buy the big thick skinless ones and fillet them. great on the grill. if you have a vacuum sealer, seal them and let soak for about 4 hours. i also substitute chicken broth for the beer. i think it tastes better. cook on hot side of grill for about 3 minutes each side then move from direct heat and cook each side for additional 8 minutes (really depends on how hot your grill is). enjoy

    Ingredients

    • 1/4 cup beer
    • 1/3 cup fresh lime juice
    • 1 tablespoon olive oil
    • 2 cloves garlic, minced
    • 1 tablespoon brown sugar
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon chopped cilantro
    • 1/2 teaspoon ground cumin
    • salt to taste

    Directions

    1. To prepare the marinade, stir together beer, lime juice, olive oil, garlic, brown sugar, Worcestershire sauce, cilantro, cumin, and salt; mix well.
    2. To use marinade, pour into a resealable plastic bag, add up to 1 1/2 pounds of chicken breast, and mix until chicken is well coated. Marinate for 1 to 3 hours in the refrigerator.

Have you tried marinating in Italian salad dressing? Wish Bone works well. You can bake it or grill it.

Get one of those tall tupperware deals with the lid you can seal the air out. Put your chicken in, Greek dressing, a bit extra garlic and some Kalmata olives and marinade in the fridge over night. The lack of air seems to force the marinade into the meat deeper.
