    Polyunsaturated 8.2% 11.7%
    Monounsaturated 45.5% 45.1%
    Total Unsaturated 53.7% 56.8%


    In summary: Ounce for ounce bison has only about 1/4 of the fat beef has, and is more unsaturated than beef.

    The Formula for Healthy Eating:
    Let's try the formula on beef and bison to see how they fit into the cholesterol diet guidelines.

    Beef Bison
    Grams of Fat: 13.1 * 9= 117.90 2.42 * 9= 21.78
    Divide by Calories 117.90/ 222 21.78/ 143
    Equals: .53 * 100= 53% .15 * 100= 15%

    By this formula, beef is OUT and bison is IN.

    Well,Dr IMPC,it does not taste like chicken,which would be the expected answer.
    I've had Buffalo burgers on numerous occasions,I found it to be pretty close to beef(taste wise) but with a taste of it's own.shrug:
    Hmmm,hard to describe a taste... :

    I've only had it once, and I remember it was damn good. Tasted similar to beef.

    i think its better then beef. the freezer is filled with that, beef and elk. along with other wild game/fish. my dad and i are going to [hopefully]buy several head of buffalo next year instead of raising beef. we have all the fencing up already.

    They had bison meats out for sample at Costco. I'm not sure if it's a regular product or if it was one of those promotional things. It tasted okay, I'd say close to like any other steaks. I'll have to add this to my meals, just for a little variety....

    Back home our neighbor used to raise Buffalo, nothing like a big bison steak on the BBG. It tastes good too!
