Probably not as hard as you think. During the first couple of weeks on a low carb diet I always lose a considerable amount of water weight (~5lbs) So you probably can lose a pound/week (not water) and meet your goal.

Try doing HIIT workouts at least 4 times a week, should help lose some body fat. Also avoiding carbs and drinking loads of water. Best of luck to you on your fight!
Five days before the fight, water load like crazy. No carbs, do depletion workouts on day one and day two. Salt your food normally.
So, supposing the fight is on a Saturday.
Monday and Tuesday, depletion workouts. Drink 3 gallons of water a day. Sip it constantly - do NOT gulp it. You may wish to set a timer and drink a cup of water every xx minutes to ensure you don't gulp it.
Wednesday - walking. Continue with 3 gallons of water daily.
Thursday - No more added salt. Continue with 3 gallons of water daily.
Friday - cut water at about noon. Suck ice cubes as required until weigh-in. Take caffeine tablets with tiny sips of water to help dry you out. You could take tiny sips of black coffee or green tea if you prefer, but keep your liquid intake at close to NOTHING.
Saturday 8:30 - weigh in
Immediately commence drinking something like gatoraid diluted in water with a little whey powder mixed in. Eat simple, fast-digesting carbs and protein such as dextrose in whey, perhaps a little white rice and chicken with soy sauce. Don't overeat or overdrink so you don't get sick or bloated.
