Because in the packaging, shipping, etc, the meat is subject to contaminents. When the beef is ground, they can get on the inside. On steak, stays on the outside.

HOW COME you can eat steak rare but when it comes to ground beef you are supposed to cook it until its well done? Just a dieters question of the day.![]()

I eat ground sirloin too, but havent ever had the thought to eat a burger or otherwise browned meat in any form other than fully cooked... now a steak I like a little on the raw side... but ground meat, never even occurred to me.

No more so. The grinder could contain contaminents from other products.Originally posted by Jodi

Indeed the steak itself, on the outside might contain them, and once ground are moved into the inside.
I like my Steak Rare and my burgers Med Rare/Medium. I know I'm a weird one.![]()

No Jodi you are not -
I think that is considered the "Proper" way to cook and eat them by most of the culinary arts world. At least used to be before everyone got all sanitary safety extreme.......
That is exactly how I like 'em too.
think of it this way - when you grind the meat you increase the surface area. more surface area means more area for bacteria to grow...

Since when is eating NY Strips a cheat day? I'd eat it every day if I could afford it.Originally posted by Twin Peak
Last Saturday, I was sitting on my patio by myself, overlooking the water, drinking an overfilled glass of red, while the six burners on my grill cooked a bunch of New York strips.
Cheat days are a beautiful thing.

You kinda answered the question I had.. But is it really safe to eat it with any pink left in it?Originally posted by Prince

I like mine with a little pink. Is it really only the outside that can become contaminated?
I pedal... Therefore I am.
~ You've got to stand for something, or you'll fall for anything. ~

supposedly you're okay as long as the outside is cooked on a whole piece of meat (pink or even rare), but with the manner in which meat is handled and processed these days I do not trust it, so I go for medium to medium-well.

well i eat med-rare steak everyday....not dead yet.![]()
I'm with you JBo, I'll take my chances and enjoy my steak.![]()
