actaully, because of the glycemic index of a baked potato you are better of adding all the crap (butter, sourcream, cheese) because the fat will slow down the insulin response, as will the protein that should also be in your meal.
When cutting, and when bulking just because I prefer the taste, I like sweetpotato's. They have a good amount of fiber and are a slow burning carb source.
