    Is it ok to use dark meat chicken

    My plan is to add some low fat chicken salad to my diet. The dark meat is so much cheaper than using chicken breasts. This is how I will cook it hopefully. I will remove as much skin as possible and boil some legs and thighs. After boiling i will remove any sking that I couldnt get intially. I will then boil it again when all the bones and skin is off and the dark meat is seperated.

    Will this be ok.

    Dark chicken meat
    2 tablespoons fat free mayo
    2 tablespoons pickle relish
    fine chopped onion

    whole wheat crackers about 10 small crackers low fat.

    well, the dark meat has more fat so I guess if you don;t care about that?

    even if I boil it twice and then rinse with hot water. Will that lower the fat?

    Is there any way to get dark meat chicken almost fat free like 95% fat free or higher? Of course through a cooking process.

    I don't know about that but according to fitday there is close to twice the fat in a chicken leg compared to breast meat

    The time that it took is alone not worth it even if that cooking process lowers the fat. I would rather just buy the white meat chicken in a can to make low fat chicken salad.
