what happens really depends on the food....it could range from just tasting a bit wierd to causing serious illness depending on the food in question.

What I wanna know is what changes with the food at celular level or something like that. Food goes bad because of microbes? bacteria ? That is why I said scientific.

    Somebody doesn´t like me.
    Why wouldn't I like you?

This question just brought back some mental images of when I was young and I watched the original Poltergeist.

I dunno. You could probably make a lot of money on "re-animating" a piece of steak....

Yes CPR on a steak ..
I asked this because I read that dehydrated foods usually last longer. I am trying to understand the whole process.

May have something to do with them having less water (or none, I don't know) and thus providing less sustenance to various food-spoiling bacteria/whatnot. But hey, I'm no biologist.

Yes, because it has no water it helps. But some bacterias, microbes grow in places with very hard conditions.
You remember that in some asteroids the possibilities to have such organisms exist, they can live without oxygen.

Ok not so scientific but here is my two cents. Dehydrated foods have no moisture. Moisture has to be present in order to start forming bacteria or fungus. Take a ear infection for example. Moisture got stuck in your ear causing an ear infection if there is no moisture there is no ear infection. Now look at it in a tottaly diffrent way. Take a swimming pool. A swimming pool is a breeding ground for bacteria and algae. Why because the pool is wet 24 hrs a day. Making that a breeding place for bacteria. If there wasnt chlorine all pools would be green. You could do an experiment with bread if you wanted to. Take a piece of fresh bread and leave sealed up in a bag and take a piece of fresh bread and toast it and put that one in a diffrent bag. The bread obviously holds water but when you toast it all of the water is removed. The bread that was not toasted is going to gain bacteria faster then the one that was toasted. Utimatley the toasted one will get bacteria because a plastic bag will create moisture.

Bottom line moisture has to be present in order for bacteria or fungus to live.
