    Buckwheat

    How does buckwheat rate as a carb? I'm not talking about pancakes (on which I found a few threads), but actual boiled buckwheat groats.

    I have to eat "alternative" grains right now..so buckwheat is defintly on the list. I actually LIKE cream of buckwheat. its not bad a pancakes either
    basically all grains such as Quinoa, Amaranth, Millet, Spelt, Teff, etc are all great options as well!

    Heh, well, while most people in the US have never even heard of it, I grew up in the good ol' USSR, where potatoes, pasta, and rice were not the most common of commodities. Buckwheat tastes damn good to me

    So...is it a "good" carb in the sense of sweet pots/brown rice?

    It's a good carb.

    Jen, I like the pancakes, they are soooo yummy and I'm addicted to them. I just can't stand the taste of buckwheat any other way though.
