    Rice

    Hello,

    Is white rice in particular a good source of carbohydrates? I've never seen brown rice here anyways?

    Brown rice is best as it is not processed. White rices is brown rice with all the brown scrubbed off. This takes the fiber out of it. Where are you that you have never seen brown rice??

    I live in Pakistan but all i've seen here is the Basmati (long grain rice) variety in packets of 1 kg etc. No such thing as brown rice

    yeah, I believe that basmati rice is unprocessed although I am not completey sure since I have never had it. It should be okay though.

    I would avoid processed & white rice even if it's steamed.

    The best sources for rice are steamed brown &/or wild rice as it's much better for you, but always steam it.

    basmati white is actually pretty moderate GI, because it's longer grain. Basmati brown rice would be your best bet, though.

    tyrone, pakistani people here in malaysia call unprocessed rice - parboiled rice... maybe it rings a bell?

    And premo can you pls explain what does a grain's lenght got to do with GI of rice?

    dalila, I don't know the direct scientific correlation but long grain is always much lower GI than short or medium grain. Short grain tends to be sticky rice, longer grains tend to yield a seperate, chewier cooked product

    There are plenty of factors that affect GI values of foods.
    It is not simply the physical form and size that determines the value.
    At best one can only get a general estimate.
