    What would you do?

I have two carb-up meals per week and one of the carb-up days (last night meal) would have to be in my night class .. I can't be eating 1 cup brown rice, sweet potato and banana and veggies in class..
    Any suggestions??

The other carb up meal which doesn't fall in my night class will be a regular sugested carb-up meal

Why can't you? I read someplace, possibly on the Beverly International boards, a recipe for making the cup brown rice, sweet potato and banana into a sort of loaf or cake.

    Ah. Here we go:
    Sean's Carb Meal Bread

bake sweet potato until it is very soft. Mix it in with oatmeal and banana and add water until it is all blended into a thick paste, then add some baking powder. Place it in a bread pan and put it in the oven, set @ 350, for ~35 minutes or more. Then, when it's done spread butter over top of it and sprinkled on some sweet-n-low and ground cinnamon. It taste great. Just eat 1 cup of veggies on the side.

    I've seen this thanks
I was thinking of having protein bars or natural Low fat whole grain muffins
The SP, banana, oats and butter carb up meal might be too much to eat in class!

I was thinking of an organic whole wheat bagel (47 grams Carbs, 4 sugar), 1 small- medium banana and 1 TBSP PB as a carb up meal while I'm in class @ night
    Any comments?
