Worcester sauce, garlic,black pepper, and a little red wine if you have it.
I bought a chunk of this flightless avian. It is in my fridge, and I need to eat it (mostly because it cost me nearly twenty bucks a kilo).
I broiled up a serving simply seasoned with salt, pepper and Bragg's, and wasn't terribly thrilled with it; it reminded me of liver somehow, what with the fine birdy grain of the meat and the iron taste. But I have two servings left, and I must eat them, because they cost me nearly twenty bucks a kilo and are good for me.
Suggestions?

Well, I ended up making an Italian ostrich meatloaf, and it was not too bad. The Fibre One I used as a filler broke up the liverness. And everything tastes good with a ton of garlic.

Hmm all the ostrich I buy never has this liverness flavor that you speak of. I personally like grilling the filet and putting it on top of a nice salad.
I hate liver and mine never tasted that way either.

It's not that it exactly tasted like liver, it reminded me of liver. It was more liverlike than some other meats that aren't liver. It might just be me.
Actually, I'm not sure what it is about ostrich. I definitely like bison better.

I've had ostrich steak and thought it was fantastic. Deep red, lean, really juicy and tender. I grilled it quickly.

I get mine from the Whole Foods Market.
My supermarket (Shop Rite) carries it, along with bison and all kinds of other stuff. They're pretty cutting edge as far as supermarkets go.
