Why can't you steam them instead?
They do lose nutritional value when they are boiled. Besides that makes them all mushy and nasty too.
Hi,
having a taste for spices, i have never had boiled or raw vegetables.
instead i cook dishes (authentic indian dishes) which involve the vegetables to be boiled in water and mixed with herbs and spices and then eaten.
is it as good as eating vegetable or they lose their nutritional values when boiled. (i donot throw the water in which they are boiled, instead it is also consumed.)
i would appreciated any suggestions keeping in mind that i like my veggies this way and can never eat raw vegetables.

You can cook them. I would say just eat them raw.

steam, grill or lightly sautee(in water).. if you boil them... DRINK the water you boiled everything in!(Im serious youll loose a ton of vitamins if not)

I boil mine sometimes (I even microwave them some too (shhhh!)) but I don't do it long enough to get them to mushy, but I figure as long as I'm eating them I'll be okay. But generally, I use spices and cook them in a frying pan.
Only time will tell if it was time well spent!

thanx for your views.
But when i mean i will cook them, i have some recepies that involve drinking the water along with the vegetables, or sometimes you can make it with less water. tastes much better and i am sure then i can get more veggies in me this way.
If you want i can post some recepies for you and you can alter the amount of spices going into it, but atleast you can tell me if this is a good way to go about it or not.

I still feel you lost lots of nutrients boiling them. Even if you do drink the water. I don't understand why you can't steam them. It takes less time than boiling.

You could steam them as suggested above. And sprinkle the spices on them at the end. I understand the spices and type of cooking you are referring to. It is not really recommended to use the spices raw as they dont taste good. You could dry roast them in a pan before sprinkling them over the steamed veggies.
However if your daily fat intake is in check, sauteeing them in little olive oil along with the spices would be fine and also taste better, if taste is what you are reluctant to compromise on.
However that being said, it is a bit difficult to have veggies steamed/boiled with no spices, if thats what you are accustomed to as they taste extremly bland. But with time you can get accustomed to it. I say that from experience.
Depends on the veggies boiled as some leave a stronger taste than others. E.g. Eggplants will give the water a bitterish taste.Originally Posted by PreMier
