    Pesto

    you know, the stuff made with EVOO, parmesan, basil, and pine nuts. it's hi fat. it's generally lo carb, depending on brand. could it be considered a clean food? I'm thinking of adding it to my diet as a fat source.

    Carbchick - I have a recipe for homemade pesto over at AL. I'm not sure I posted it here. It's really very good and not near as bad for you as the store bought and it's quick and easy to make. I even like it on my salads

    thanks Jodi, that would be this one?

    1 pk (10oz) frozen chopped spinach, thawed & well drained
    1/2 c hot water
    1/3 c cottage cheese
    2 T. basil crushed
    2 T. grated parmesan cheese
    1 T. olive oil
    2 cloves garlic; minced

    Looks good, if you want lowfat
    (does T = tablespoon?)
    But I'm doing CKD-type thingy just now, so ... I'm wondering if the shop-bought horrible jar things would be OK. they're basically just OO so should be OK. I think.
    of course I SHOULD make my own but I don't have a blender.

    Yeah, 1T is tablespoon. You have to add more water that I wrote though I think I typed it wrong, its suppose to be 1C hot water.

    If you are doing CKD then just add more olive oil, oh an add pine nuts too.

    I don't know the ingredients in the store bought ones though.
