I generally go on body weight for fat/protein requirements.

You should be aiming for an absolute minimum of 0.3g of fat per pound - this is for basic health reasons. Levels of 0.4g/pound are better. So, if you are currently 275 lbs then you should be getting at least 83g (750 cals worth), with 110g (990 cals worth) probably healthier.

You are also currently getting 1.9g protein/pound - which is probably a little more than you realistically need (even on steriods). Maybe consider decreasing this slightly (to, say, 1.7g per pound - or 470g/1900 cals worth) and increasing fats slightly instead (to 100 to 105g).
