Kamut is like wheat - and wheat has an intermediate to high GI when processed in wheat cereals. It also has the cane sugar which will bump it up too... But the flax and soy flour will lower it (fats and protein). The fibre content is pretty good and will lower the GI as well...
It is highly processed, which means you loose a lot of the natural benefits found in unprocessed grains (loss of phytochemicals, vitamins and minerals... which is why they added them back in again)...
I s'pose if you are craving cereal then it is one of the better cereals you can eat.... But nutritionally speaking I would still go for oats over this every day.
