fiber also slows digestion (helps to lower the GI meals). it increases insulin sensitivity and lowers both total blood cholesterol and LDL-cholesterol...

There are also some studies that suggest that is can absorb small amounts of dietary fat leading to less calories being absorbed.

Fiber gives your colon something with bulk to push on....eating to little over time can result in colon issues such as diverticulosis and such..... And it does help bind and carry fat away.....

Put 1/3 cup (quite a small amount) of All Bran Buds in your morning oatmeal or shake - 10 grams of fiber right there. It's like a lovely bit of Colon Blow first thing in the morning.

Unless you have problems than it's only 1 day and I wouldn't worry you are getting alot of fiber in your veggies. However, you can always take a SF fiber supplement.
