You don't absolutely need to, but you loose half the good stuff because, along with the fibre, lot of the vitamins and minerals are also in or just under the skin (vitamin A, Vit E, B vitamins, calcium, potassium etc...).Originally Posted by njdevil13
If you wash and scrub them well then the skin should be just like eating potato skin... Especially if you bake them or make 'jacket' sweet totos...
(ps: The large salad would be a good addition anyway).
