Is having oats instead of say brown rice as a side dish in most of your meals ok? Or should you have more of a variety in your carb sources throughout the day? I love oats, and often eat them with some grilled chicken and veggies as dinner.

I have done this. Beef and oats make a good comination. It is easier for me to restrict calories using extra thick oats compared to rice.

But - different foods give you different phytochemicals and other good things that can really help you in terms of overall health (eg: lycopenes from tomato's, indols from broccoli, citrus flavinoids from citrus). They are all useful to you in some way.
Also, in terms of vitamins and minerals, if you include a wide range of fruits and vegetables and get a good range of grains, legumes, nuts, eggs and animal products, you are much more likely to get a good dose of everything in combinations that are much more useful to the body.

I always have my oats with semi/ skimmed milk, can't stand havin oats with water and the one time I had oats with protein powder and water it came out like concrete
