    Peanut Butter Question

    Is the peanut butter you get in jars condensed or different in any way from freshly ground peanut butter? I buy freshly ground peanut butter and the macros on the tub are different from the ones on a regular jar.
    Any help is appreciated.

    The difference between the natty stuff from a factory v's that freshly ground stuff from health food stores is that the natty stuff in the factory is heated (so they can squirt it easily into the jars) and then cooled - so it is 'condensed' during this process. As it cools to room temperature the oil usually seperates off to the top of the bottle.

    The non-natty processed stuff is different again - as, in addition to being heated it is 'set' with stabilisers (oil) and has added sweetener (usually icing sugar).... So the oil will not seperate after cooling.
