    Lentil soup?

    i am on a low carb high protein diet - is lentil soup okay to eat for lunch - i have six small meals a day

    lentils are a great source of fiber and low GI carbs but you need more protein
    I train differently than most, my beef is with gravity the weights on the bar are just the medium...Thanks to Wall Street your slice of the American Pie has been reduced to a crumb.

    so you guys eat them in a soup.. hmmm that's an idea.. I've bean cooking them thick - the consistency of my oats, and they are soooooo dry, yucks!

    try using 2 cups of water for every 1 cup of dry lentils

    Thanks LAM I think I am already doing that, the problem is I would let it all evaporate till the lentils are cooked really soft and thick.. will try to leave it still soupy....

    As said, lentils are GREAT as a low GI, high fibre carb meal. If it is in a soup with lots of vegetables then it is even better!

    You do want to add a complete protein to the meal - so add some meat/cottage cheese or eggs to the mix as well!

    once you bring the lentils/water to a boil lower the temp down to a simmer for around 10 minutes. it should be a pretty soupy mixture after that
