Again, I go and put my chicken in the oil, it fries, right after I finished frying it is already rancid, rotten, already "over expiration date". That can´t be.

As soon as the oil is heated beyond a certain point, it's rancid so basically it's before you even put the chicken in the fryer.

I'd hate to disagree with Jodi but i have source that says what Jodi says is wrong, to a point. Yes, excessive high heat can turn the oil into trans. fat, it's not all of the oil but a small amount of the oil. I do remember reading somewhere though that tests were done on people that ate fish for their proteins and when compared to fried v.s. non-fried fish, the frying of the fish cuased a blockage of protein absorption, I think. Ill have to look it up and see if i can find it. here is my source on the oil olive though.

That site i brought up says that turning the oil into a trans fat in at home cooking situations in not going to turn it into a hydrogenated oil like the process done in a factory. But im in no way disagreeing that trans fats are bad im just saying that this happening while cooking isn't really harmful, most deep frying is done around 325 - 350 which isnt a good idea but some shallow pan frying isn't. but the amount of trans fats made from the cooking process isn't known to us, unless you have some cool lab equipment.

i fry my eggs in olive oil (i only really eat eggs on the weekends though), but i like them runny so the oil never reaches its smoking point. i also use a frying pan for my beef patties because i broke my foreman grill and i'm not always willing to go out back and BBQ a couple of patties.
