Don't put the oil in the pan...
Rub a thin layer of oil all over the chicken itself,
this will help seal in the juices when the chicken cooks
(I also add spices to the oiled CHKN, it helps the dry spice stick to the meat)
When cooking chicken how much olive oil do you guys put in the pan? I want to cook 2 at a time.

You could probably use an olive oil spray or PAM (and only do a very quick spray) and it would probably not add anything significant in terms of fat, but I suggest that, if you are going to use oil, then you do as Monkey suggested and use a known amount on the actual chicken breast. That way you can calculate for additional fat in your diet...
