    Grilled chicken and natural peanut butter!

    I tried something different tonight, instead of using extra virgin olive oil (for a healthy fat source) I drizzled some natty pb on my grilled chicken breast and it was the bomb! I killed that chicken!

    Anyone else ever try this before or had a similar experience (an odd combo) with natty pb?

    yeah i do it with tuna too sometimes. Whats better is if you make a kind of thai peanut sauce with garlic, soy, pb, ginger, and a little water to thin it out. Stir that up good till it makes a thick sauce and pour it on.... mmm...

    I had something similar to that at a chinese restaurant once. It was called PB chicken and I think all they did was coat it in PB and fry it in a wok. It had just a slight PB taste tho, i would have prefered it tasted like PB.

    Indian and thai food has all sorts of chicken dishes with peanut based sauces.

    Here's an example of a standard peanut sauce recipe.
    Ingredients ½ c peanut butter, preferably unsweetened
    2 t light brown sugar (unless peanut butter is sweetened)
    ¼ c brown rice vinegar
    2 T chopped cilantro, chives, or scallions
    2-3 cloves garlic, minced
    1-2 T soy sauce
    1 t chili oil, chili powder, or paprika
    ¼ - ½ c warm water

    Directions: Over medium-low heat, whisk together everything but the water. Add ¼ c water and taste.
    Adjust seasonings, then gradually whisk in more water until desired consistency. Serve.

    Notes: Peanut sauce thickens as it warms up, so you may need to add more water if you don't serve it right away.

    When I go to CPK I often get the Thai Linguine:

    A spicy Thai peanut-ginger sauce with julienne carrots, green onions, cilantro and roasted peanuts. Topped with fresh bean sprouts. Available with Chicken or Shrimp.

    It's delicious.

    I was actually in thailand about a year ago and ate these little meats on sticks many times, who knows... probably was I also ate fried grasshoppers and beetles. EEECCCHHHH!!!... the things you do to be macho infront of your friends when you drink ... lol.
