    im pretty sure you need to bake it at a high temp like 450 or so degrees for about 10 mins or so, to bring out the oils of the almonds, then just grind it up into a paste in either a processor/blender/or coffee grinder, then if its not pasty enough, mash it in a bowl until it becomes a "butter". You could add in a little honey/splenda/cinnamon etc also to give it some of your own flavor if you want.

    My understanding is that the best way to make almond butter is to make sure the almonds are raw, and not bake/roast them. Though I admit I'm at a complete loss at to how you make almond butter raw.

    Just did this yesterday...

    Preheat the oven to 400 -450
    Ideally use blanched almonds
    lay flat on a pan
    roast for 10-15 min stir in between

    let them cool

    Throw them in the food processor and let it run till smooth (or crunchy...your pick). you add nothing to cream them just run them in the processor for a LONG time

    Really nice taste.

    Try to pick almonds from places that have a high turnover as they can go rancid if sitting too long.

    Store almonds in the freezer to preserve.

    If you don't roast, you'll need a tablespoon of oil (olive or canola) and a lot of mixing to release their natural oil.
