    Eating a lot but clean?

I aiming for the largest gains I can get. I'm not too worried about fat gain, but I don't want to put on any more fat than I have too. I'm 5'10 180 pounds with approx 14 % bf.
Pretty much all I'm eating is chicken (cooked oil free and unseasoned except for garlicsalt) Cottage cheese, fish, wheat bread and eggs (3 whites 1 yolk). I work at a restaurant so I'm pretty much sorrounded by foods.
I don't eat scheduled meals really, and I eat a lot
example, in the last eight hours I've had 4 chicken breasts, a pint of cottage cheese with oranges and more water then I care to think about.
Is it ok when bulking to eat so much? Are these the right foods? All I really know is to avoid anything processed, deep-fried and things that start with Mc.
What should I add\subtract? What caloric intake should I aim for?

Personally, I would cut a little bit more fat before bulking if you're currently at 14%. If you're not too concerned with fat gain, then you don't need to be too overly concerned with eating a lot of food when bulking, especially if you are young. Four chicken breasts, a pint of cottage cheese, and oranges over 8 hours time isn't that much. Where are your complex carb and fat sources?

How do you measure body fat? Is there anything I can buy at GNC or something like that?

Calipers are the cheapest way. You can measure by yourself, by a friend, or you can pay someone working at your local gym to do it. You can also do hydrostatic water submersion testing. It's the most accurate way to measure BF%, but also the most expensive. I know they offer it at my university, sometimes they offer it for free if they are doing testing/surveying.

    Went and had the electic BF% done, I'm at 12 %. (I think it's low but I won't complain)
What are complex carbs? Why do I need them. Fat sources are usually olive oil on salad, and I thought cottage cheese (even lowfat) had plenty of "good" fat in it. Like I said, I'm reluctant to call it a diet, moreso I'm just eating from a limited food source. I eat a TON. Also what are good sources of EFAs? I read that they are required to build new cells. What has them, and what doesn't?

Read the sticky "Guide to Cutting, Bulking and Maintaining." and scroll down to the bottom of the first post and there is a shoppinglist.doc link you can click on. I wouldn't trust that electric bf test that much because they can be affected by so many things. But it may be right, 12 is low

Pretty much everything you listed was protein source. You need carbs! Try adding alot of oatmeal in and some brown rice. Also use flax seed oil and fish oil.
