I just used this on my salmon last night totally awesome then broiled it. I'm trying it right now on my chicken.

Coat the salmon(or chicken whatever) fillets well on both sides with the

Blackening Spice:
5 tablespoons kosher salt
5 tablespoons paprika
1 tablespoon dry thyme
1 tablespoon ground black pepper
1 tablespoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground white pepper
