What I learned in school today: Glycemic Index = Diet Fad

Another new lesson in nutrition today.. well sort of. We are covering carbohydrates at the moment and today's lecture was supposed to be on low carb diets. However, my professor explained that this lecture was put together when Atkins had saturated the diet scene. She said she was just going to give a brief description of fad low carb diets. She mentioned the "G.I. Diet" I was confused at first because this isn't even a diet. She said it was flawed because you can eat icecream and due to the fat content it lowers the GI (which is true, there are exceptions). However, I HARDLY think this is a diet, NOR fad. She said jelly won't be high GI because you usually eat it on bread and that would neutralize it. I have a hard time taking this woman seriously these days. She is basically arguing that it doesn't matter if you eat high or low GI carbs.

sounds like she really doesn't know much about what she's talking about.
