Oats work well
I take my whey protein in my post workout meal around 6:00pm, What kind of carbs should go with this? ( sugar carbs, fiber carbs, etc.)

either dextrose, maltodextrin, honey (if you have no other options), and some people swear by oats... but I dont like them in my PWO shake at all, oh yah and bananas arent too bad either... but they arent really needed

Actually - a little fructose PWO is a good thing... Helps to restore total body glycogen....in addition, fruit isn't optimal PWO due to the conversion process. best kept for pre-workout or a different time of the day.
Also, you have to remember that fruit is not all fructose - depending on the fruit you will only get between 2 and 10g per serve - and so you also get a variable amount of glucose, starch, sucrose (yes, it is half fructose too), and other sugars.
