    extracted egg whites

Do egg whites in a carton hold the same nutritional benefits as those from the egg whites taken from inside the shell and separated from the yoke? Should I stick to the shelled eggs or buy it in the carton? I feel like it is a waste throwing away all those yokes.

They are fine... Eggwhites do not actually have a lot in them besides some protein (they are very low in vit/minerals etc etc - all of that is in the yolk). So if you do not want to waste the yolk, stick with the carton stuff...

Better yet - if it fits in your diet add 1 whole egg to a few whites from a carton - that way you get the nutrients of one yolk and the protein from the rest of the whites.
