If I cook all of my meals in one go for the week will they be alright just stored in the fridge in airtight containers? I usually cook my batches of food twice a week (Sunday and Wednesday) but I don't have time to do that any more. I'm a little weary about the food lasting the entire week.
My diet consists of the usual things: chicken, sweet potato, brown basmati rice, quinoa, pearl barley, red lentils, the usual fiberous vegetables.
I did think about freezing some of the meals. I'm just not convinced that they will turn out that great doing things this way.
Proteins are good... Fats are good... Carbs are the problem!
I say it is fine - although some suggest that you should use the chicken within 3-4 days... But if it is in an airtight container in a cold part of the fridge then it should not be a huge problem.
If you are concerned then yes - you could freeze the portions. They will turn out fine (just take them out of the freezer the night before you need them).
