    Protein and Heat?

    I have heard that protein breaks down if it is exposed to heat??

    Firstly is this true??

    And secondly if it is why do people put protein in their protein bar mixes as the heat from the oven would surely disable the protein??

    Any answers would be great

    Quick answer, no, unless.....you burn the item, then yes, the protein and aminos (and the baking) are ruined.
