Are raw nuts healthier than roasted?

    Are raw nuts healthier than roasted?

    I heard something that when the nuts are roasted, some of the fats that are supposed to be good for you turn into unhealthy fats. I don't know about the validity of this so could someone clear it up for me. Thanks!

    I think if you have raw nuts or seeds and roast them yourself, that is fine.

    Most roasted and SALTED nuts, well you don't know how old they are. I do think the cooking will have the oil go rancid more rapidly.

    One of my weaknesses right now, roasted and salted nuts, YUM
