no vegetables in my diet :(

i have a big problem that i don't have the ability to cook anything due to lack of equipment/time/availability at home / cooking knowledge...so my diet will consist of boiled eggs/skimmed milk /yogurt/canned tuna..etc and stuff that doesn't need preparations ... but i still could eat raw cucomburs/tomatos/fruits ..is that enough ???? could i satisfy my vitamin/mineral needs without eating vegetables, beans and cooked stuff?? would any one give me some ideas of vitamin rich food that could be eaten raw without prepararion??

Pretty much all fruits and veggies u can eat raw and are actualy much better for you when uncooked.

things that could make ure life easier are:

    cottage cheese
    egg whites
    whey
    oats (raw or easily nuked)
    skim milk cheese
And how bout a cook book or class?? lol

If ure eating all these raw veggies and fruit and still worry about vitamin/nutrient intake, why not throw in a good quality multi?

Cooking frozen veggies is easier than boiling eggs. Drop a cup full in a bowl -pour a couple of tablespoons of water on them and nuke for 2 minutes.

    That's what I do.

A great way to get veggies is... on your day off from work - have someone cook (since you can't) a monster pot of meat stew (like 4 gallons). Throw all the veggies you've only dreamed of into that + all the other stuff you like. Lunches for weeks if you seal them in containers. My freezer is full of them.

BTW - Throw the veggies into the stew 20 minutes before end of cooking... so they don't become "characterless".

    2 cents. LOL

My Dad, God Rest His Soul, used to cook green beans with cucumbers. The worst tasting concuction ever! Tasted a little bit like the only vegetable I absolutely refuse to entertain -

    Zuccini! Raw or cooked.

I could never eat a bell pepper raw. Don't even like them raw in salads. Radishes are pretty intolerable. My mother loved them... in fact, most the things my mother loved (and served too much) are the things I can't eat.

I used to hate veggies. But now I cook them on the George Forman grill for a few minutes when my chicken is done. Taste really good that way.

I had asparagus for the first time a couple weeks ago while on vacation in Charleston, SC. It was grilled with my ny strip steak and scallops. I absolutely "loved" it! Ordered another round of it. Heavenly!

    The steak was good, too.

Yeah, I love asparagus. That's usually what I have. Actually I get something called asparagus stir fry mix, which has asparagus, broccoli, cauliflower, and carrots.

    Steak? I want a steak! I haven't had a steak in months!
