I'd like to learn more about nutritional values and healthy diets from an objective point of view (no fad diets). Any good books out there that will educate me using laymen terms, that doesn't read like a dictionary?

Eat Drink & Be Healthy, by Dr. Walter Willett (my favorite general nutrition for health book)
Don't Eat This Book, by Morgan Spurlock (of Supersize Me fame)
and of course the mother of all nutrition text books - no laymens terms here, but an excellent book to have as a reference when you doubt what you read in other books: Sports & Exercise Nutrition by McArdle, Katch & Katch
