what is the reasoning behind combining these two together than incorporating all 3 into the same meal...i know some love this type of eating and others go with all 3 macro nutrients in each meal...
does anyone know the science behind it?

Well alot of meals you would have all three macro's in one. It's more situational, as in for a pre (30 mins before) / post workout meal, a carb / protein will be absorbed fast, as i think fat may slow down digestion. and a fat / protein before sleep because some people don't like carbs at night / as a last meal because of the insulin spike and maybe associated fat storage. everyones different with different goals, if you mix all three i wouldn't say anything overly bad is going to happen, and if you split all the same. trial and error for what works better for you.

There isn't much science behind it, but some swear by it. There's already a mile long thread on the subject. Have a read and decide for yourself.

I know that if I eat a strictly carb only meal, I wind up feeling like shit and rather lethargic. If I add protein and some EFAs to that, I feel much more satisfied as well as full. As a side note, when adding protein/fats, it also lowers the GI of the carbs that I am taking in. Couple this with training for a contest and you have one happy bber!!

Also note carbs and fat aren't the best to have a lot of together because carbs detract from you body's ability to assimilate fatty acids which is what ends up getting them stored in adipose tissue. This is where the carb-free fad came from. Sedentary people found that if they cut carbs completely their bodies would have to rely on fat for energy. The problem with that is there isn't enough energy and you become even more lethargic, and if you're someone who likes to train in any way shape or form just forget it.
At night fats are slowly digesting which give you the little bit of energy you need when doing all that sleep stuff like muscle repair and what not. Carbs would (like was already said) give an insulin response and your fats wouldn't get used like they need to be.

Even protein gives an insulin response. Eating "in general" gives an insulin response. The type of carb makes the biggest difference. It would also depend on body type, overall daily nutrition and what exactly you are trying to achieve.Carbs would (like was already said) give an insulin response and your fats wouldn't get used like they need to be.
Really the biggest 'issue' with carbs is more to classification. You need the majority to be Oligosaccharides and polysaccharides (complex carbs) for body composition concerns.

You're right to a degree though....having a boat load of pasta followed by say rocky road full fat icecream would be dietary death.

As you highlighted, I did say "a lot together" everything has it's perfect balance and you can't do without any one group.
I understand the role carbs play in the body's use of fat. In another post I mentioned how without carbs your body relies on fat to provide energy and how it just isn't enough period especially for those who train. Complex Carbs are broken down into simple sugars before use and the steady production of glycogen through the insulin response is what you want to avoid a large quantity of at night because it's not condusive to sleep. The lower carb foods that have the fats you want at night have the minute number of carbs you'll need to play their role in the use of fat.
