    Canned Veggies

    I like to use canned mushrooms for omletes and stuff...is it really not worth it? I know its high in sodium but does veggies in a can retain their nutrients? I limit the cans I eat but sometimes its super nice to have them around...but if its totally blank calories then I will stop.

    In order of nutrient retention:

    1. Frozen
    2. Fresh
    3. Canned

    Frozen veggies are "flash frozen" and retain the most nutrients. Fresh veggies sit around a long time before sold and gradually loose quality.

    I occasionally use canned peas or mushrooms to add to other dishes - for simplicity.

    I often think "too much" is made from the difference unless you have sodium concerns. Too me, it's a question of taste... and convenience - so I choose frozen.

    I only eat canned beans for similar fears. You can stock up on frozen veggies really easiy. Most of them heat up in a pan, or steamer within 5 minutes.
    Or alot of days I just toss em in a tupperwear tub with CC and some hotsauce on my way out the door. By the time i am ready to eat, they are thawed.
    And to me, anyhthing canned, besides beans (red, black, black eyed peas, etc) tastes like complete shiat.
    On a long enough timeline, the survival rate for everyone drops to zero.

    I buy the Glad Containers. Customarily, I toss a fridged piece of meat in one and pour some frozen veggie blends on top with a "spritz of water". By the time lunch rolls around, they are thawed and ready for microwave - about 2:30, 1000 watts.

    I do enjoy the Margaret Holmes and Glory canned products. Generally beans. Glory Blacked-Eyed Peas make my eyes roll into the back of my head. Perfectly seasoned. The greens are fantastic! I love to cook... but Glory canned products can't be matched for flavor in canned veggies.

    The thing I've noticed about good frozen veggie products is my preference "not to season them", except for generous peppering and ocassionally a stingy, almost countable, drop of salt grains.

    It's nice to savor the veggies... without the fanfare. Awakens the senses.

    I too am a huge fan of Glory greens....got the BIG can in the cubbard waiting for a cheat day....I have not tried the peas but now I feel like on my way home from the gym I will swing by the store...cause I am all curious now!
