In order of nutrient retention:
1. Frozen
2. Fresh
3. Canned
Frozen veggies are "flash frozen" and retain the most nutrients. Fresh veggies sit around a long time before sold and gradually loose quality.
I occasionally use canned peas or mushrooms to add to other dishes - for simplicity.
I often think "too much" is made from the difference unless you have sodium concerns. Too me, it's a question of taste... and convenience - so I choose frozen.
