It's not a number set it stone and it really depends on your body. It's just an average number. It's very unlikely that people can digest more than 40-50g of protein. If you use smaller amounts of protein you body becomes more efficient of using all that protien for repair and energy. Your body has to break those proteins down into amino acids and peptides first but the protein doesn't sit there waiting to be broken down. It gets digested and used for other things such as feeding bacteria and glucose production.
I think the slower digesting proteins will get broken down more than fast digesting proteins such as egg whites, fish and whey.
Legumes are an excellent source of protein. Add them in with some brown rice and you have a complete protein.
meal five is right after workout but the sixth meal is not. That makes perfect sense though. Your body is slowing down and burning less towards the end of the day. So why add carbs, that your body will store as glucose if they aren't burned.
