    Steel cut oats

How do you guys cook steel cut oats?

I do exactly as the can said, but they come out a little firm...not smooth like normal oats. I don't think this is right because I've had them from a restaurant and they were really smooth...could it be because I'm cooking them wrong? Or would a restaurant using milk make a big difference?

Soak them in water over night.

Should take 30-40 mins to cook.

So...soak it over night...use the same amount of oats and water...then let it come to a boil until it starts to thicken...and then simmer it for 30 minutes-ish?
