    what r ur favorite vegetable recipes i need to up my veggie intake.

    i usually just make salads. what i like to do is just chop up all the veggies and put em in a tupperware. that way i have a pre-made salad, and i really have no excuse not to eat it. just throw it in a bowl and add some italian dressing or olive oil & vinegar.
    i usually just buy pre-packed chopped lettuce of different varieties, or spinach. then i pick a few of the following: peppers, mushrooms, onions, tomatoes, cucumbers, radishes... or something else if it looks good.

    it's also good to throw some peppers, onions, spinach and mushrooms in an omelet in the mornin'. i also think having a little salad with breakfast is underrated.

    If you search a few forums for recipes, I am sure you will find a few great recipes.

    Otherwise, get a few cookbooks, Laura Cravelle (figure competitor and wife of Chris Aceto), has a few great cookbooks.

    You can always modify recipes as well, take out butter, put in another fat (and often reduce it), thing like that.

    There are ENTIRE cookbooks just dedicated to vegetables, what ALL the different vegetables are and how to prepare them.
