I don't know what the official definition is but i always understood processing as the manufacturer or whoever, does something (any process) to the food that takes it from its natural state.

For example whole grains (ie brown rice) consist of three main parts; the bran, the germ, and the endosperm. Certain processes strip certain parts, for example white rice is made by stripping the bran (not sure on this fact, its been a while since i've learned this stuff) which has most of the fiber, protein, vitamins and minerals.

There are tons more examples, like processed meats (cold cuts, say turkey breast, which is meshed up, cooked and sliced for you ready to eat) have tons of salt and other additives to stay fresh because it is far from its natural state (the raw turkey breast you can by in the meat section).

Basically, the mass media tries to sell us on nutrient enriched bullshit but what is lost on most people is that nature is already perfectly made for us and we can't possibly improve on it. The biggest motivation for all the enrichment crap is money, as is the case with most health/fitness related issues.
