Vegetables

I actually find it difficult to eat my required daily intake of vegetables everyday. Lately I have been substituting steamed veggies by making a large vegetable soup each week and pumping it full of good stuff like broccoli, collard greens, celery, carrot, onion, parsnip and whatever else I can get my hands on.

I have 2 large bowls each day and it helps with keeping me full as I'm on a low carb/calorie deficit diet trying to cut.

Basically Id like some opinions on whether this is a suitable alternative to eating steamed veggies each day and whether I would still receive the same nutrients.

Any opinions would be appreciated.

New-ish here. but...

As far as how the nutrients hold up in the soup, I will let someone else answer. Just a little tip that I am trying as I have had a tough time getting veggies in my diet. I do make everything ahead of time on Sunday. The way I make my meals is in bowls. I use:

Cubed Chicken ~1.5lbs

and two (thinking about upping it to three) of the following:
~14oz Green Beans
~14oz Asparagus
~14oz Carrots
~14oz Broccoli
~14oz Cauliflower
~14oz Spinach
*(Note: 14 oz is about a can or 2 cups or one bag frozen)

I take it all and mix it in a big bowl with a 2tbls of seasoning. Lemon Pepper, Gourmet Burger Seasoning, Montreal Seasoning etc... These are all about 80 calories for the whole batch so the calories are kinda a non-issue. GrillMates makes a ton of these seasonings for about $2 per container.

Take all of the mix and wok it with about 1tlbs of olive or sunflower oil. Split the mix into 4 Tupperware bowls. Works out to about 2 cups of food. Microwave 2 mins, shake up and eat. It has helped me tremendously.

Calories 240.0
Fat 4.0 g
Carbohydrate 11.0 g
Protein 37.0 g

You could try buying a juicer and just mixing some vegies in w/ some fruit
