EDIT:
Feedback sooner than I thought, and considered. Ramblings tend to be my way of things, and it's good to air things to keep my head clear. Want to provide the most supportive environment that I can, and I think I have the tack on that now. In the end, it's more about my role than anything else, and I want it to be the right one.
Much appreciation as usual for the sound advice from someone who isn't personally involved!

You have to back off.
Seriously.
You cannot do anything to make this change. She has to come to it herself, and she's clearly feeling judged and deprived.
Regarding "unhealthy", who the hell cares? I eat whatever I want if it fits my macros. And sometimes, even if it doesn't.
It's her body. She has to feel comfortable in it, and ideally, around you.
Have a think on something for a moment: think of something about yourself you'd like to change. Have you given it a go at any point in your life? Hard, isn't it, and it's YOU you want to change, and you WANT to change.
Now consider the utter futility of trying to change someone else.
Drop it, now, completely and forever. Or be prepared to deal with the increasing distance that will happen between the two of you over time.
Your call.
Wondering where to start? Confused? "Homework 1" will get you started.
Think you're ready for the "next step"? Take this test.
